Garlic Butter Sauce

Review: Sometimes I get in this mood where I just want something light, like buttery pasta. BY FAR one of my favorite and easiest things to make.

Ingredients:
1/3c - Butter
1 - clove crushed garlic
1/4tbs dried basil
2tsp dried oregano

(For this recipe, I really just eye-ball the measurements, I used a whole stick of butter and used canned garlic)

Directions:
1. In a small saucepan melt butter, add garlic and saute untiil cooked. Add dried oregano and dried basil and stir until heated through.
2. Serve warm

Garlic Butter Sauce I

Lemon Sauce Tilapia

Review: Soooo delicious. The lemon sauce came out thicker than I had expected, but it was very good!! The recipe serves the fish with rice and almonds, however I don't like almonds and I was in more of a pasta mood.





Ingredients:
1/4c plus 1tbs - Flour
1tsp - Salt
4 - Tilapia Fillets
2tbs plus 2tsp - butter
1/3c - Chicken Broth
2tbs - White Wine (or additional Chicken Broth)
1 1/2tsp - Lemon Juice
1 1/2tsp - Parsley

Directions:
1. In a shallow bowl or plate combine 1/4c flour and salt; dip fillets in mixture
2. In a large nonstick skillet coated with cooking spray, cook fillets in 2tbs butter over medium-high heat for 4-5 minutes on each side or until fish flakes easily with fork. Remove and keep warm.
3. In same skillet melt remaining butter. Stir in flour mixture until smooth; gradually add the broth, wine and lemon juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in parsley. Serve fish and sauce with rice; garnish with almonds.

Tilapia & Lemon Sauce Recipe

Greatest Chocolate Chip Cookies in the World!

Review: My title should explain all. These are straight up the greatest chocolate chip cookies in the world!!





Ingredients:
2c - Flour
1/2tsp - Salt
1/2tsp - Baking Soda
3/4c Molten Unsalted Butter
1c - Brown Sugar
1/2c - White Sugar
1tbs - Vanilla Extract
1 - Egg
1 - Egg Yolk
2c - Semi Sweet Chocolate Chips

Directions:
1. Preheat the oven to 325°
2. Mix flour, salt, and baking soda
3. In a seperate bowl mix butter, brown sugar and white sugar, mix until a light creamy texture; add vanilla extract, egg, and egg yolk
4. Mix both bowls together, fold in chocolate chips
5. Take a tablespoon of mixture and place on the baking tray, be sure you leave enough space between the cookies
6. Bake for 15 minutes

Buttermilk Biscuits

Review: I'm not crazy about biscuits like some people are, but these are definitely delicious!!

Ingredients:
2 1/4c - Self Rising Flour (or make your own: instructions below)
1/2c - Butter
1 1/4c - Buttermilk (or make your own: instructions below)

Directions:
*Self Rising Flour
          Mix 1 1/2tsp Baking Powder and 1/2tsp Salt per cup of flour

*Buttermilk
          Put 1tbs Vinegar or Lemon Juice into a measuring cup, add milk to make 1c, let stand 5min

1. Cut butter into smaller chunks
2. Mix butter with flour, crumbling the butter chunks
3. Cover and chill for 10 minutes
4. Add buttermilk, stirring until ingredients are moistened
5. Turn dough onto lightly floured surface
6. Kneed 3-4 times adding additional flour as needed
7. Fold dough onto itself,
8. Pat dough to 1/2 inch thickness
9. Cut with 2 inch round cutter (I used a glass and floured around the edges)
10. Bake at 450 for 13-15 min, brush with melted butter when finished
